I always said, that I can't cook. It is partially true - I'm definitely not a born cook.
But it is probably also a result of my lack of experience and not really wanting to learn.
But over the years I have, however perfected my cooking to some extent.
But I still prefer my mom's cooking, when it comes to good traditional home cooked meals - they never turn out the same for me.
But in terms of treats, I actually think, I do quite good - especially when it comes to easy and quick treats.
And recently these two have been my go-to treats.
Chocolate/Oatmeal Cookies
This an old recipe, that I have changed, because I couldn't find a good one, that included oatmeal.
You will need (for 8-12 cookies)
100 g soft butter
1 egg
100 g sugar
50 g brown sugar
1 teaspoon of vanilla sugar
100 g dark chocolate
100 g oatmeal
50-75 g flour
1/2 teaspoon baking powder
a pinch of salt
Chop up the chocolate
Mix sugar, brown sugar and vanilla sugar and then mix in butter and egg.
Mix oatmeal, 50 g flour, baking powder and salt and mix it into the other mixture.
Lastly add in the chocolate.
Add in the rest of the flour, so that the mixture is still sticky and soft, but not so that it sticks to much to your fingers. You will need to follow you instincts here :-)
Form the mixture to balls and place on a baking sheet and give them a light press.
Make sure to leave plenty of space between them (I put 4-6 on a sheet, depending on the size)
Bake them on 200 degrees for 10-15 minutes, depending on how dark you want them and how soft and chewy you want them to be in the middle.
Watermelon Iced Tea
I have been wanting to try to make this for over a year.
But every recipe I found seemed very cumbersome, so last week I just decided to wing it and do a bit of trial and error.
And I'm pleased to say, that I hit the mark in my second try.
(my first one failed because of the wrong tea, the tea being to hot and not using honey)
The measurement are kind of hard to determine, as it depends on personal preferences, but I use the following for 1 Liter.
The Juice of 1/2 a mid size watermelon (preferable one with few seeds)
I blend it with a hand blender and then strain it. But you can use what ever method you prefer.
Around 0,4 L of refrigerator cold tea.
I use a Jasmin tea from the store Tiger, and I put in 3 tea bags and let it steep for quite a while.
But I don't find, that this tea get bitter, so you should probably be careful, if you use another tea.
While it is still hot and steeping, I add in one tea spoon of honey.
And then leave it to cool in the refrigerator for as long as possible.
I then mix the two together in a jug starting with the tea and then the melon juice, leaving a bit of room for the juice from half a lime. I leave the lime in there as well.
Give the jug a good shake and it is ready to be served over ice and a lime slice.
